The heat is definitely on and summer getaways are on a roll. We might be holding brunches, dinners, and game nights at our homes or vacation rentals. We have lots of activities in store and we would need good food to fuel our bodies for all the fun that’s going to happen.

Whole foods are the best for fueling the body

Let’s be honest. When we are having fun, YOLO or the you only live once mentality tends to set in wherein healthy habits are put aside to make way for the main activities. It is usual for leisure offerings to include greasy snacks, sweets, fast food, soda, and alcoholic beverages.

But what if we can incorporate whole foods not just into our daily lives, but during leisure as well? A diet high in healthy foods like fruits, vegetables, root crops, and whole grains are associated with a reduced risk of lifestyle diseases such as obesity, hypertension, diabetes, liver & kidney diseases, and cancer.

Potatoes are a wholesome source of carbohydrates

Food gives our body energy and carbohydrates are the preferred fuel of our cells. But not all types of carbohydrates are equally nutritious. Processed carbs and refined sugars usually contain more additives, more fat, more salt and less micronutrients.

Carbohydrates that have undergone zero to minimal processing pack more nutrients per gram. And potatoes are one of the best wholefood sources of carbohydrates! They contain good amounts of vitamin B6, vitamin C, potassium, protein, and fiber — all of which are essential for optimized metabolism of the body.

So here are 7 potato recipes you can make to serve as snacks, appetizers or mains on your next activity:

Mediterranean Spiralized Potato Salad

This beautiful salad would be a unique sight at the dining table. This will pair perfectly with grilled meats, poultry, and fish.

Sticky Sambal Honey Fries

Now, this would be a star among the young adults. The tangy and mildly spicy sambal flavored fries would be an adventurous alternative to the common MSG-packed chemically-flavored fries.

BBQ Pork Carnitas with Masa Whipped Potatoes

This dish can double as a rice topping or as a sandwich filling! I bet it would also be so good on tacos or nachos so this whole tray will be gone in a jiffy.

Patatas Bravas Salad Bowl

This paprika-spiced potato salad is the opposite of boring. I would love to see a build-your-own-bowl set-up at a family brunch and watch them put together the differently colored goodies for a wholesome meal.

Egg Veggie Hash Brown Cups

This mini quiche is a dream breakfast or power snack in between high energy activities. I can imagine making these the night before a trip to consume on the road, or to stash in the fridge and quickly reheat in the toaster oven.

Leek & Smoked Bacon Loaded Potato Soup

For those who prefer to find cooler havens in the summer, this is for you! With sophisticated flavors and well-loved ingredients, this will be enjoyed by children and adults alike.

Air-fryer potatoes with Green Goddess Dip

This snack is perfect for the more chilled out trips like a yoga retreat. I can see this being served alongside kombucha, grilled skewers, and a colorful fruit platter.

Final Words

When we are out and having fun, eating nutritious food is usually not a priority. However, planning and preparing good food for moments of leisure is doable. We just have to be intentional about it. Including wholesome energy-rich foods like potatoes is important to keep the spirits high during getaways and vacations.
